I launched mumeasymeals back in 2017 while I was still working full‑time as a marketing manager in downtown Asheville. I’d been cooking for my family every night, but I never thought a simple recipe post could turn into anything more. In March 2018 I posted my first “one‑pot chicken and rice” recipe, and within a few months the comments section was buzzing with people asking for variations. That tiny spark grew into a site that now welcomes about 45 000 unique visitors each month and has over 12 000 newsletter subscribers.
The site has taken on a life of its own. In June 2022 I was featured in Local Eats magazine, which helped push traffic past the 30‑thousand‑visitor mark for the first time. In 2023 I rolled out a free meal‑plan generator that’s been used by more than 3 000 families so far. I also started a quarterly “Seasonal Spotlight” series that highlights ingredients from local farms; the latest episode on heirloom tomatoes attracted a record 8 200 page views.
I live in Asheville, North Carolina, with my husband, Marco, and our two kids, Maya (7) and Finn (4). When I’m not stirring a pot, you’ll find me hiking the Blue Ridge trails, tending to my rooftop garden, or kneading sourdough dough on a rainy Sunday. My favorite things are fresh basil, the smell of coffee at sunrise, and the sound of my kids laughing while they help me set the table.
